The heat enacts the polarity of water, this making it more attracted to itself...? Idk, but something close to that is how we figure if out griddle is hot enough for pancakes... The water will "dance" as it evaporates, not simply be gone in a matter of seconds...

All it is, is the water is evaporating so fast that there is enough vapor to keep the blobs of water floating :D

understanding my logic as far as I can, the heat inside the mass of the recipient is freed very slowly since the atmosphere around it is cold. that happens with everything. Haven't it never happened to you to pass your hand over a boling pan? it is freeing heat. when the water drops into the pan, instead of splitting up, it bundles up and "levitates" over the bottom of the pan. the distance is microscopic, but its there. This is called an "air cushion" , preety cool, huh?
